چکیده

The material of investigation was consisted of samples of fresh and ripened cheeses made from raw and cooked milk subjected to rennet or acid coagulation. The primary isolation of enterococci was carried out on kanamycin-aesculine-azide agar at 37 °C and 42 °C during 24 hours. It was isolated totally 42 strains of enterococci. The examination of antibiotic resistance/sensitivity profiles was performed by applying disk-diffusion procedure on MullerHinton agar. The number of enterococci determined in cheese samples depended on applied technological process. In the samples of fresh, by rennet coagulated cheese made from raw and cooked milk the number of enterococci was ranged from 8.0×10 to 9.0×10 cfu g, and from 4.0×10 to 4.4×10 cfu g, respectively. In the case of ripened cheeses made from raw and cooked milk subjected to acid coagulation the number of enterococci was ranged from <10 to 5.0×10 cfu g and from 2.5×10 to 1.5×10 cfu g, respectively. In the samples of fresh cheeses made from raw and cooked milk subjected to acid coagulation the number of enterococci was ranged from 2.4×10 to 2.12×10 cfu-g, and from 5×10 to 6×10 cfu g, respectively. The phenotypic identification of isolated enterococcal strains was performed according to the following biochemical-physiological characteristics: microscopic examination (cell morphology), catalase activity, growth in MRS broth at 10 °C and 45 °C, growth at pH 9.6, growth in broth containing 6.5% NaCl, growth in 0.1% methylen blue milk, resistance at 60 °C/15 and 30 minute, Voges/Proskauer reaction, fermentation of ribose. The isolated strains of enterococci were resistant to following antibiotics: penicillin (65.82%), tetracycline (62.02%), lincomycin (68.35%), gentamycin (27.84%), neomycin (31.64%), erythromycin (31.64%) and chloramphenicol (65.82%).

Evaluation of Safety Aspects and Antagonistic Activity of Enterococcus Strains Isolated from Traditional Pot Cheese

Background & objectives: Safety control of traditional raw milk cheese such as Pot cheese is of special importance. Although enterococci can play beneficial probiotic or technological properties in cheese and their use in food is the subject of debate due to evidence of pathogenicity and antibiotic resistance. Method: In the present study, after isolation and morphological and biochemical iden...

Molecular Identification of Pathogenic Enterococci and Evaluation of Multi-drug Resistance in Enterococcus Species Isolated From Clinical samples of Some Hospitals in Tehran, Iran

Background: Multidrug-resistant (MDR) enterococci cause many problems for physicians and infection control specialists in the recent years. Hence, by the identification of antibiotic resistance patterns of enterococci in different geographical regions an appropriate strategy can be developed to prevent bacterial antibiotic resistance and provide effective treatment. The current study aimed at i...

Evaluation of antimicrobial resistance and virulence of enterococci from equipment surfaces, raw materials, and traditional cheeses.

Forty enterococci isolated along the production chains of three traditional cheeses (PDO Pecorino Siciliano, PDO Vastedda della Valle del Belìce, and Caciocavallo Palermitano) made in Sicily (southern Italy) were studied for the assessment of their antibiotic resistance and virulence by a combined phenotypic/genotypic approach. A total of 31 Enterococcus displayed resistance to at least one or ...

Antibiotic Susceptibility in Enterococci Isolated from Patients in Kerman, Southeastern Iran

Background: Enterococci faecalis are predominating species of Enterococci causing nosocomial infections. Acquisition of resistance to antibacterial agents, and ability to transfer the resistant genes made them clinically important. This study was performed to determine the frequency of isolation of different species of Enterococci, and the antibacterial resistance pattern of the isolated specie...
